  • 12 slider buns or Hawaiian rolls (such as King’s Hawaiian)
  • 6 tablespoons unsalted butter, softened (divided)
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese (sharp or mild)
  • 3/4 cup shredded mozzarella cheese
  • 23 medium fresh jalapeños, seeded and finely minced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 2 tablespoons honey
  • 4 slices cooked bacon, chopped (optional)
  • Chopped chives or green onions, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Slice slider buns in half horizontally, keeping the top and bottom halves intact as slabs. Place bottom halves in a 9×13-inch baking dish.
  2. In a mixing bowl, combine cream cheese, cheddar, mozzarella, minced jalapeños, garlic powder, smoked paprika, salt, and black pepper. Mix until smooth and well-blended. Fold in chopped bacon if using.
  3. Spread the cheese-jalapeño mixture evenly over the bottom buns. Place the top bun slab back on and press down gently.
  4. In a small bowl, blend 4 tablespoons softened butter with 2 tablespoons honey until creamy and smooth.
  5. Brush the tops of the buns generously with the honey butter, reserving a little for after baking.
  6. Bake sliders uncovered for 15–18 minutes, or until buns are golden and cheese is bubbling. Tent loosely with foil for the last 5 minutes if tops brown too quickly.
  7. Remove from oven and, while still warm, brush with remaining honey butter. Sprinkle with chopped chives or green onions if desired.
  8. Let cool for 1–2 minutes, then slice into individual sliders with a serrated knife. Serve warm.

Notes

Let cream cheese and butter come to room temperature for easy mixing. For less heat, use fewer jalapeños or substitute mild green chiles. For extra crispiness, bake uncovered; for gooier cheese, tent with foil. Sliders can be assembled ahead and baked just before serving. Leftovers reheat well in the oven.
