These air fryer pepperoni pizza roll-ups are a quick, easy, and lighter alternative to traditional pizza snacks. Crispy on the outside and gooey on the inside, they’re perfect for satisfying pizza cravings without the extra calories.

  • 6 low-calorie flour tortillas (6-inch or 8-inch rounds, such as Mission Carb Balance)
  • 48 turkey pepperoni slices (about 68 per roll-up)
  • 1 1/8 cups part-skim mozzarella cheese, shredded (about 3 tbsp per roll-up)
  • 69 tbsp pizza sauce (1 to 1.5 tbsp per roll-up)
  • Cooking spray (olive oil or avocado oil spray)
  • Optional: Italian seasoning
  • Optional: Crushed red pepper flakes
  • Optional: Grated Parmesan cheese

Instructions

  1. Shred the mozzarella cheese if needed. Lay out tortillas on a clean cutting board. Prepare sauce, pepperoni, and any optional toppings.
  2. Spread 1 to 1.5 tablespoons of pizza sauce evenly over each tortilla, leaving a small border at the edges.
  3. Sprinkle about 3 tablespoons of shredded mozzarella over each tortilla. Layer 6-8 pepperoni slices on top. Add optional crushed red pepper flakes if desired.
  4. Tightly roll each tortilla into a log shape, pressing the seam to seal. Use a dab of extra sauce if needed to help it stick.
  5. Lightly spray the outside of each roll-up with cooking spray. Sprinkle with Italian seasoning or grated Parmesan if desired.
  6. Preheat the air fryer to 375°F (190°C) for 2-3 minutes.
  7. Place roll-ups seam-side down in a single layer in the air fryer basket. Air fry for 6-8 minutes, flipping halfway through, until golden brown and crispy.
  8. Let roll-ups cool for 1-2 minutes on a plate lined with paper towels. Slice in half on the diagonal or serve whole.

Notes

Do not overfill the tortillas to prevent bursting. Preheat the air fryer for best results. For gluten-free, use almond or gluten-free tortillas. For dairy-free, use vegan cheese. Roll tightly and place seam-side down to prevent opening. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
